Salads that Satisfy

Salads sometimes get stuck with a reputation for being boring, repetitive, or just an afterthought on the dinner table — but they can be so much more than that. With a few simple additions and a little creativity, salads can become fresh, satisfying meals packed with flavour, texture, and colour.


One easy way to change things up? Skip the lettuce once in a while.


Leafy greens absolutely have their place, but salads don’t always need a traditional base. Building a salad around vegetables, grains, roasted ingredients, herbs, fruit, or proteins can create something completely different — and often much more exciting.


The key to a memorable salad is variety. Think crunchy, creamy, juicy, chewy, crisp, and fresh all in one bowl. Adding ingredients like nuts, seeds, fresh herbs, roasted vegetables, or fruit instantly transforms a simple salad into something more nourishing and satisfying. Add a protein, and suddenly you have a full meal that feels substantial enough for lunch or dinner.


The good news? You don’t need complicated recipes to make this work. Start small. Pick two or three ingredients you wouldn’t normally combine and experiment with flavour and texture.


Build Beyond Basic Greens

If you do enjoy leafy salads, try rotating through different greens instead of reaching for the same package every week. Romaine, iceberg, spinach, spring mixes, leaf lettuce, and kale all bring different textures and flavours to the table.


Kale, for example, becomes much more enjoyable when prepared properly. Try chopping it into bite-sized pieces and massaging it with a drizzle of olive oil and a pinch of salt for a few minutes. This helps soften the fibres and creates a more tender texture.


You can also build salads with vegetables that add crunch, sweetness, or colour:

  • Bell peppers

  • Mushrooms

  • Green onions or red onions

  • Carrots

  • Celery

  • Broccoli

  • Cabbage

  • Asparagus


Roasted vegetables are another simple way to add depth and richness to salads. Roasting brings out natural sweetness and creates a soft texture that pairs beautifully with crisp ingredients. Sweet potatoes, Brussels sprouts, beets, peppers, mushrooms, and turnip are all wonderful additions.


Add Texture with Nuts & Seeds

Nuts and seeds add healthy fats, plant-based protein, and satisfying crunch. Roasting or chopping them often improves both flavour and texture in salads.


Try experimenting with:

  • Almonds

  • Walnuts

  • Pecans

  • Pistachios

  • Cashews

  • Pumpkin seeds

  • Sunflower seeds

  • Sesame seeds

  • Hemp hearts

  • Pine nuts


Each option brings its own unique flavour and texture, whether added raw or roasted.


Sweetness Changes Everything

A little sweetness can completely transform a salad.

Dried fruits add chewy texture and concentrated flavour, while fresh fruit brings juiciness and vibrant colour. Even small amounts can brighten the entire dish.


Some favourites include:

  • Raisins or dried cranberries

  • Dates or figs

  • Mango or apricots

  • Berries

  • Grapes

  • Apples or pears

  • Peaches or nectarines

  • Citrus

  • Kiwi or melon


And yes — we absolutely eat with our eyes first. Colour matters.


Don’t Forget Fresh Herbs

Fresh herbs are often the ingredient that makes a salad feel restaurant-worthy.

Basil, parsley, dill, cilantro, mint, and thyme can all completely shift the flavour profile of a dish. Start with a small amount and taste as you go, especially with stronger herbs.


Tip: Roll leafy herbs together and slice them thinly before adding them to your salad. This distributes flavour more evenly without large pieces overpowering each bite.


Salads that Satisfy

Adding protein is what takes a salad from side dish to satisfying meal.

Chicken, salmon, tuna, shrimp, tofu, eggs, legumes, and cheese all work beautifully depending on the flavour profile you’re building.


Cheese can add creaminess, saltiness, richness, or tang. Feta, goat cheese, cheddar, and herbed cheeses each bring something different.


Legumes are another easy addition that boost both fibre and texture. Chickpeas are always a favourite, but lentils, black beans, kidney beans, and pinto beans are excellent too.


The beauty of salads is that there’s no single “right” way to make one. A handful of fresh ingredients, a balance of textures, and a willingness to try something new can completely change how salads show up in your kitchen.
